Memory Book

I am really toying with the idea of putting together a book to document the memories and stories people have been passing on to us about how my dad effected their lives. I have two questions for you:

1. Scrapbook-ers -- do you have any good suggestions for doing this? It will be a mostly text story with maybe a few photos. Is there a good cheap way to put it together?
2. What are your stories? What are your memories? What should I include?
